Jamon Iberico - Iberian Ham from Spain
There was a front page article about the type of Jamon (Ham) in the Wall Street Journal. A lot of people want to buy this but the USDA will not approve or has not approved a processing plant in Spain. I've never tasted this Jamon but I am very interested in it--it cures from 1 -3 yrs, and they pigs eat a special kind of acorn that ads to the flavor. Makes me hungry just thinking about it.
